Ingredients



    * Zucchini, 3 cups shredded
    * Granulated Sugar, 1 2/3 cups
    * Vegetable Oil, 2/3 cup
    * Vanilla Extract, 2 tsp
    * Egg, 4 large
    * *Whole Wheat Flour, 3 cups
    * Baking Soda, 2 tsps
    * Salt, 1 tsp
    * Cinnamon, ground, 1 tsp
    * Cloves, ground, 1/2 tsp
    * Baking Powder, 1/2 tsp
    * Pecans, .1/2 cup chopped or I used crushed
    * Sun Maid Golden Raisins 1/4 Cup
    * Nestle's milk chocolate morsels- 1/2 cup

    (If using self rising flour, omit baking soda, salt and baking powder)

Directions

Heat oven to 350 degrees. Grease or spray 2 loaf pans.
Mix first 5 ingredients in lg.bowl. Stir in remaining ingredients. Pour into pans. Bake 40-60 mins. Ovens vary-so bake until toothpick comes out clean. Cool about 10 mins and release from pan. Cool completely before slicing.
Makes 2 loaves- 24 slices each- 48 servings in all.

    If it got hard then something wasn't right or you baked it too long.- I make this and have it around for a week or so and it never hardens- did you keep it wrapped up to store it?

    Really good! I didn't have blueberries, so used 1 pt. Costco 3-berry mix instead. Made in mini-loaf pans for portion control. Yummy Sunday morning treat! - 11/1/09
