Introduction

Number of Servings: 4

Ingredients

    1 c. water
    1 can chicken broth
    12 oz. boneless skinless chicken breast, cut bite sized
    1 1/4 c. whole wheat orzo, uncooked
    1 c. frozen peas
    2 oz. Monterey Jack cheese
    salt, pepper, and dried herbs to taste(I use basil and thyme)

Directions

1. Brown chicken in a skillet sprayed with cooking spray. Sprinkle on salt, pepper and whatever herbs you like.

2. Add water and broth to pan, bring to a boil and pour in orzro.

3. Cover and cook, stirring occasionally, until orzo is soft and almost all liquid is absorbed.

4. Remove from heat and mix in peas and cheese. Stir until cheese melts. Serve immediately.

    Incredible!
    I used chicken thighs because breasts were out of stock but everything else was the same. SO GOOD. Will definitely be making again. - 2/25/21
