Ingredients

1 pgk McCormick or Ortega Enchilada sauce mix
1 1/2 cup water
1 can tomato sauce (8 oz)
1 lb. lean ground beef or ground turkey
8 corn tortillas
1 cup shredded cheddar cheese
Directions
stir sauce mix, water and tomato sauce in medium sauce pan. Bring to boil. Reduce heat and simmer 5 min or until thickened, stirring occasionally.
Brown meat in large skillet on medium-high heat. Drain fat, stir 1/2 cup of sauce
Heat tortillas acacording to package directions; dip into sauce to coat. Spook about 1/4 cup meat filling into each tortilla. Roll tortillas tightly; place seam side down in greased 11X7 inch oven dish. Pour remaining sauce over enchilada's. Top with cheese
Bake 350 degrees for 15 minutes or until sauce is bubbly and cheese is melted.
