Ingredients

    Pie Crust:
    1.5 Cups Flour
    1 tsp. Sugar
    3/4 tsp. Salt
    1/2 Cup Vegetable Oil
    2 T. Skim Milk

    Filling:
    Fresh cranberries - about 1 Cup - enough to line the bottom of the unbaked pie crust.
    1/2 C. Brown Sugar
    1/2 C. Chopped Walnuts
    1 Egg
    1/2 C. Sugar
    1/3 C. Butter

Directions

No Roll Perfect Pie Crust:
Place flour, sugar and salt in 9 inch pie crust and lightly mix. Mix oil and milk together with fork and pour into flour mixture in pie pan. Mix with fork and press out in pie pan, flute edges.
Filling:
Line the pie crust with enough cranberries to cover the bottom. Sprinkle with brown sugar and then nuts. Beat egg and sugar with fork and add melted butter and mix with fork. Pour over pie. Bake at 325 for 45 minutes.
Makes 8 servings.

    This is my favorite pie...the crust is to die for...melts in your mouth and so easy...no rolling! I use it for all of my one crust pies. A little high in calories but a nice treat now and then!

    Incredible!
    I made this for a church carry-in. It was very well received (even by a culinary institute graduate!) I cut it into 12 pieces and served it with fresh whipped cream. Great recipe! - 11/15/09
