Introduction

I use these for school box and sport treats for my 5yrs daughter , she has TYPE 1 diabeties , so we look for a low fat snack ,she has 1/2 slice
this is still a little high at 19% and were currently working on a lower fat version and 172 calories.

Ingredients

    175 gr low fat margarine
    2 tbls golden syrup
    45 gr s-r flour, sifted
    65 gr plain flour, sifted
    75gr natural mueslie
    60gr brown sugar
    10gr smart sugar ( or substitute sugar)
    75 gr finely chopped apricots
    40gr sultanes and mixed fruit
    40gr rolled oats
    20gr coconut
    2 eggs , beaten lightly

Directions

grease and line lamington pan
heat oven on 185
combine golden syrup & marg in sm saucepan over low heat until marg melts.
combine all dry ingredience ( not eggs)
add beaten eggs and cooled margarine mixture

press/ pour mixture into pan bake in oven 25-30mins
cool in pan , then on rack cut into finger
