Introduction
An easy and tasty spaghetti dinner! An easy and tasty spaghetti dinner!Number of Servings: 4
Ingredients
-
4 cups cooked spaghetti
2 tbsp Olive Oil
1 small onion, chopped
2 large cloves garlic, minced or crushed
2 cups zucchini, sliced 1/4 inch thick, then into halfs for medium zucchinis or quarters for large zucchinis
1 large tomato, chopped
1/4 cup parmesan cheese +3 tbsp for topping (optional)
1 tbsp dried red chilis (optional)
1 tsp oregano
salt & pepper
Directions
-Cook pasta according to package directions
-meanwhile, heat oil on medium heat in a large frying pan
-add onions and zucchini and cook for 2 minutes
-add garlic and continue cooking until zucchini has reached desired tenderness
-when zucchini and onions are almost done, add the chilis (optional), oregano and salt and pepper to taste
-add tomatos and stir
-remove from heat and add 1/4 cup of parmesan cheese and stir
-toss with cooked spaghetti
-add extra parmesan on top if desired
Serves 4
I like to serve this with a side soup or salad (spinach-mushroom goes well) and a small slice of italian bread (those calories are not included in this recipe)
