Introduction
A little variation from my original lemon cheesecake recipe. This one has no crust, therefore the serving size has been doubled! A little variation from my original lemon cheesecake recipe. This one has no crust, therefore the serving size has been doubled!Number of Servings: 8
Ingredients

1 can (13 oz) Milk, canned, evaporated
1 tsp Vanilla Extract
4 serving Jell-O, Lemon SF, 1/2 cup
24 tsp Splenda Sugar Blend
12 tsp Lemon Juice from Concentrate; Publix
8 oz Cream Cheese
Directions
1. Pour evaporated milk into a small mixing bowl; put bowl in freezer at the start.
2. Dissolve Jell-O in boiling water; place in refrigerator and chill until slightly thickened.
3. Place cream cheese in large mixing bowl to soften.
4. Once Jell-O has become slightly thickened, begin the next steps.
5. Cream together cream cheese, sugar, and vanilla.
6. Add thickened Jell-O and lemon juice; beat together until blended.
7. Stiffly whip evaporated milk.
8. Fold into Jell-O mixture.
9. Divide into 8 dessert dishes.
9. Chill completely.

FYI . . . The 60 minute prep time is due to getting the evaporated milk cold and the Jell-O slightly thickened, which takes 40-45 minutes. Actual hands-on prep time would be about 10-15 minutes.
