Ingredients

    3 Chicken Breast, boneless/skinless
    2 packages Ramen Noodles, chicken flavor,
    4 cups rough chopped Beet greens
    2 cups sliced Mushrooms, fresh
    1 cup chopped Onions, raw,
    2 stalks chopped Celery
    1/2 cup chicken broth

Directions

Cut raw chicken into 1/2 inch or so pieces. Chop all veggies. In a wok or large pan heat a small amount of oil and stir-fry onion, celery, garlic and mushrooms. While those cook, break up the ramen noodles into small pieces and cook in microwave with about 3/4 cup water (do not add seasoning packet) for about 3 minutes or until cooked. When veggies are crisp-tender, remove from pan and cook chicken on high heat. Add some chicken broth to help keep the meat tender and the season packets from the ramens. When meat is almost done cooking add the noodles and the cooked veggies to the pan and allow all to cook together. Once the chicken is no longer pink add the greens, cook for about 2 minutes until they are wilted. Makes about 6 large servings.
