Ingredients

    2 tblsp olive oil
    one glove garlic, crushed
    1 cup sliced red onion
    1 cup sliced yellow squash
    1 cup sliced zucchini
    1 cup sliced or chopped red bell pepper
    1 cup sliced or chopped green bell pepper
    2 cups chopped cooked chicken breast
    salt, pepper, and crushed red pepper (add to taste)
    1 cup chopped tomato
    1 cup low-fat cheddar or pepper jack cheese.

Directions

Cook all vegetables in skillet(except tomatoes) in olive oil until crisp-tender. Add chicken breast, salt, pepper, and crushed red pepper-cooked until heated through. Remove from heat, sprinkle with tomatos and cheese. Serve on top of spanish rice and a side of low-fat refried beans.
