Ingredients

    peeled and deveined large shrimp (1 1/2 lb.)
    sugar (1 T) (I substitute splenda for sugar)
    paprika (1 T)
    salt (1/2 t)
    garlic powder (1/2 t)
    ground red pepper (1/2 t)
    ground thyme (1/4 t)
    ground allspice (1/8 t)
    olive oil (2 T)
    cooking spray

Directions

* Prepare grill to medium-high heat.

* Combine all dry ingredients. Combine oil and shrimp in a large bowl; toss well to coat. Sprinkle spice mixture over shrimp; toss to coat. Thread shrimp evenly onto (8 inch) skewers. Place skewers on a grill rack coated with cooking spray; grill 6 minutes or until done, turning once.

Serves 4 (2 skewers each serving)

    Very Good
    This is delicious; I used the same recipe from Aug. 09 Cooking light and love it. I serve it over mixed greens with a chunky mango/avocado salsa on top. - 10/23/09
