Number of Servings: 6

Ingredients

    No stick cooking spray
    1 can diced tomatoe w/green chiles or
    jalapanos
    1 cup chopped onion
    1lb pork tenderloin uncooked
    1 tbsp chili powder
    1 tbsp taco seasoning

Directions

Spray large skillet with cooking spray place over medium high heat. Add onions and saute until soft then add can of tomatoes and peppers, add chili powder, and taco seasoning and stir. Simmer for a few minutes until juice thickens. Add pork tenderloin and let simmer untill cooked through, turning once.

Makes about six servings.

    Very Good
    It was good, but I thought that this would have more sauce to it. Next time I make it, I might double up on the tomatoes and add some more veggies. - 3/19/11
