Ingredients

* Flour, white, 2.25 cup
* Baking Soda, 1 tsp
* Brown Sugar, 0.75 cup
* Turbinado Sugar, 0.75 cup
* Butter, unsalted, 0.5 cup
* Olive Oil, 0.25 cup
* Ground Flaxseed, 1.25 cup
* Vanilla Extract, 1 tbsp (or more, to taste)
* Egg, fresh, 2 medium
* semi-sweet chocolate chips, 2 cups
* Oats, 1 cup
* Milk, 1%, 1 cup
Directions
Preheat oven to 375 degrees Fahrenheit. Put butter into pyrex or other oven-proof dish and begin melting it in (or on top of) oven. When butter is halfway melted, add oil, sugars, and vanilla, and put back into oven to continue melting. Mix dry ingredients in large bowl, then add melted mixture and eggs. Stir until it looks like a nice, brown, evenly moist cookie dough. (My wife thinks it's ready to eat at this point. She likes to roll it up into a plastic-wrapped log o' cookie dough, freeze it, and slice off pieces with a bread knife whenever she wants some.) Use a teaspoon to scoop out bits of dough and place on an ungreased, non-stick tray. Bake at 375 degrees Fahrenheit for 7-9 mins. Check bottom of cookie for burning, and adjust time or distance from heat accordingly. Allow to cool on mesh rack. Enjoy. Makes 48 cookies.

WOW! These cookies are excellent! I even liked them cooked ;)
Make sure to make them small; there's a lot of carbs & fat. The flaxseed contributes beautifully to the texture and taste of the dough. Yum! Even though they're small, they are full of flavor and even satiated my sweet tooth w/ 1. - 4/22/07
