Introduction

cream together in mixer 2 C. Sugar, 1 C. shortening. ADD 6 ripe mashed bananas, 4 well-beaten eggs. SIFT 3 TIMES: 2 1/2 C. flour, 1 tsp. salt, 2 tsp. baking soda. blend ingredients + don't overmix.     Incredible!
    A long-time favorite. I don't make it often because it's very rich -- but delicious! Used a cup of chopped walnuts. I don't think the poster added nuts to the nutrition data. I used 4 mini-loaf pans (2 cup capacity) and there was a little overflow. The loaves will make nice Christmas gifts. - 12/26/14
