Introduction

We loved fish tacos in Baja so here is my version of them! We loved fish tacos in Baja so here is my version of them!
Number of Servings: 4

Ingredients

    8 oz tillapia or Basa fillet cut into four strips
    1/4 cup flour
    3/4 to 1 t salt
    1/4 t black pepper
    1 T Chile powder
    1/2 t onion powder
    1/2 t ground corriander
    1 c chopped cabbage
    1/4 c. chopped cilantro
    4T chopped scallion
    4 servings of Hot Smokey Salsa (see Helen's own cookbook)

Directions

Mix together all the dry ingredients. Dredge each of the fish pieces in the flour mixture until coated.

Put 2-3 tablespoons of olive oil in a skillet and heat. When the oil is hot, cook the fish until lightly browned and cooked through, about 3-4 minutes on each side.

Remove from the pan and drain on paper towels or coffee filters to remove any excess oil.

Warm the tortillas and serve with cilantro, scallions, cabbage and salsa on top.

One taco is one serving - and they go great with beans or rice!
