Ingredients

    1/2 cup finely shopped onion
    1/2 cup finely chopped fresh mushrooms
    1/4 cup finely chopped celery
    2 minced garlic cloves
    2.5 tsp olive oil
    10 oz frozen spinach, thawed and squeezed dry
    1/4 cup crumbled Gorgonzola cheese
    16 oz boneless skinless chicken breast
    1 egg white
    1/4 cup ground walnuts

Directions

In a small skillet saute onion, mushrooms, celery and garlic in oil until tender. Stir in spinach and cheese. Remove from heat.

Cut a lengthwise slit in each chicken breast. Fill with spinach mixture.

Place egg whites and walnuts in 2 separate bowls. Dip the chicken in the egg white then the walnuts.

Place in an 11-inch X 7 inch baking sheet coated with cooking spray. Bake uncovered at 350 degree for 25-30 minutes or until chicken juices run clear.
