Introduction
I used to have seven or eight layers to this dip when I first started making it, but not everyone likes salsa and guacamole. So, it's now down to six, but still delicious. It's best made with Rosarita refried beans, but I can't seem to find them many places. This makes 9 servings and I put it in a 9 x 13 x 2 casserole dish. Ingredients
-
-1 large (31oz) can refried beans fat free, I use Walmart
-1 package 40% less sodium Old El Paso taco seasoning 1.25 oz or about 8 t from the can
-1 1/2 c Daisy Lite Sour Cream
-1 1/2 C chopped green onions
-40 black olives sliced or chopped depending on your liking(I used Lindsey large size)
-2 C chopped fresh tomatos, well drained
-2 C Kraft 2% milk Mexican Four Cheese shredded cheese
Directions
Mix the sour cream and taco seasoning well and level it off on top in the bowl then store in the fridge for at least 2 hours for the seasonings to dissolve in the sour cream. Then stir again.
Meanwhile, chop your tomatos and let them drain. Chop the green onions and chop or slice the olives.
Spread the beans in the bottom of a 9 x 2 x 13 casserole dish evenly. Top with the sour cream mix then the green onions and then the olives. Follow with the tomatos and finally the cheese.
This makes 9 servings. I didn't measure the weight, but sliced down each way a third to divide it. It was filling with tostitos scoops which add another 140 cal, 7 fat, 18 carbs and 2 prot for 13 scoops.
We like it heated up and with salsa (not in the nutrition).
Enjoy!
