Number of Servings: 8

Ingredients

    1 butternut squash, peeled, seeded, and cut into cubes
    2 pears, cored, peeled, and cubed
    1 onion diced
    1 tbsp grated ginger
    4 cups chicken broth
    sour cream -optional
    2-3 tbsp oil

    Calories calculated for this do not include sour cream.

Directions

Heat oil in a large soup pot.

Throw in your onion and ginger and cook until soft.

Add in squash, pear, chicken broth, and salt & pepper.

Bring to a boil then cover and reduce to a simmer for 15 minutes or until squash is tender. Let cool for a few minutes then puree with a blender.

Top with sour cream if you'd like.
