    240g (2 cups) whole wheat flour
    50g (1/2 cup) wheat germ
    1/2 tsp. baking soda
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. ginger
    3 large eggs
    150g (1 cup) sucanat or brown sugar
    1/3 cup virgin coconut oil
    2 tsp. vanilla extract
    110g (1 cup) oat bran
    4oz. (2/3 cup) Hershey's special dark chocolate chips
    2/3 cup dried blueberries (or other dried fruit)
    45g (1/3 cup) finely chopped crystallized ginger


Pre heat oven to 375. Combine flour, wheat germ, baking soda, baking powder, salt and ginger. In another bowl, whisk together the eggs, sucanat, oil and vanilla. Stir dry ingredients into egg mixture. Stir in remaining ingredients. Drop by cookie scoopfuls onto lightly greased baking sheets. Flatten with wet fingers. Bake for about 10 minutes. Makes about 38 cookies.
