Introduction

A simple, relatively cheap, yet very tasty fruit salad. Great for potlucks. A simple, relatively cheap, yet very tasty fruit salad. Great for potlucks.

Ingredients

    1 lg. can pineapple chunks
    2 cans mandarin oranges (drained)
    1 cup seedless grapes (cut in half)
    1-2 bananas
    1 sm box Jello Cook 'n Serve Vanilla Pudding (sugar free/fat free)

Directions

In 2 cup measuring cup, drain pineapple juice from canned pineapple, add water as necessary to equal 1.5 cups juice. In small sauce pan over medium heat, prepare jello using the pineapple juice rather than milk. Just bring to a boil and set aside to cool.

When cool, mix pineapple, mandarin oranges, and grapes in bowl. Fold in pudding mixture. I add bananas right before serving but pineapple juice in pudding mixture will keep bananas from darkening.

Makes 8, 1/2 cup servings (I'm guessing).
