Introduction

This is a fabulous soup, healthy and decent without too much fat or carbs. This is a fabulous soup, healthy and decent without too much fat or carbs.
Number of Servings: 3

Ingredients

    1lb package low fat turkey sausage(calorie count depends on brand and % fat)
    1/2 cup diced onion
    1 Tablespoon Italian seasoning
    1-2 cups fresh sliced mushrooms
    1 & 1/2 cup canned pumpkin
    4 cups chicken broth
    1/2 cup half and half
    1/2 cup water

Directions

Brown sausage, drain, then add onion, garlic, mushrooms and seasonings and saute til done.

Add pumpkin and broth to this and stir well,

Simmer 20 minutes.

Stir in half & half and water, simmer on low another 5 minutes or til heated thru.
