Couscous, 6 cup, cooked
Olive Oil, 3 tbsp
Rosemary, 1 tbsp
Asparagus, fresh, 2 cups
Black Olives, 40 jumbo
Goat Cheese, Soft, 6.4 oz
Directions
Makes 6 servings.
Boil 3 cups of water and add 2 cups of dry whole wheat couscous, turning heat to low. Let simmer for 1 minute, or until all water is absorbed.
In a separate pan, heat olive oil and add rosemary while heating. Add asparagus spears and saute for 3 minutes. Add olives and toss for a minute. Add vegetables to couscous. Break up goat cheese into pieces and add to couscous, then mix and serve. (Add salt and pepper to taste.)
