Ingredients

    2 T Sunflower Oil
    2 ¼ CUPS GRATED CARROTS
    8 OZ/225 G LEEKS, SHREDDED
    2 ORANGES, PEELED AND SEGMENTED
    2 T KETCHUP
    1 T RAW BROWN SUGAR
    2 T LIGHT SOY SAUCE
    ½ CUP CHOPPED PEANUTS

Directions

1. Heat sunflower oil in a preheated wok.
2. Add grated carrots and leeks and cook until they have just softened (2-3 min)
3. Add Orange and cook gently as so not to break up the oranges.
4. Mix ketchup, b. sugar and soy in a small bowl.
5. Add mixture to the wok and continue to cook for another 2 minutes.
6. Transfer to warmed bowls and sprinkle with chopped peanuts. Then serve immediately.

*Serving over rice is nice
