Introduction

I love rhubarb pie, but not the fat and calories that comes with it. This satisfied my craving, but is a much healthier alternative. I love rhubarb pie, but not the fat and calories that comes with it. This satisfied my craving, but is a much healthier alternative.
Number of Servings: 10

Ingredients

    5 cups diced rhubarb (can use frozen)
    1 cup sugar
    cinnamon and nutmeg to taste
    enough water to cover rhubarb

Directions

Put rhubarb in a medium saucepan. Add enough water to cover rhubarb, and bring to a boil, stirring occasionally. Turn heat to minimum, and add cinnamon and nutmeg. Mix well. Allow to cool, stirring occasionally. Serve alone, or as a topping for ice-cream. Makes about 10 1/2 cup servings.

    what is amt of serv size? If i had 2T on biscuit ? 2T=??? 5C 10portions =1/2c amt??? - 9/22/09

    Works out to about 10 1/2 cup servings. Could be a bit less if you boil it down to make it thicker.

    Very Good
    I'm not a fan of Rhubarb but my DH is and he loved it. Next time I'll add less water as it was a bit on the watery side he said. - 6/16/10
