Introduction

Fabulous taste and sooooo easy! Fabulous taste and sooooo easy!
Number of Servings: 12

Ingredients

    1.5 lb lean pork loin
    1 pkg of frozen black bean/corn/onion/pepper (I use PictSweet)
    1 can of green enchilada sauce
    1 cup shredded cheese
    2 cups shredded cabbage
    12 whole wheat tortillas

Directions

Put pork, frozen veggies, enchilada sauce in crock pot. Cook on low for at least 8 hrs. When done, take fork and shred pork.

Heat wheat tortillas in a wet towel in microwave for 2-3 minutes or until soft.

Serve with shredded cabbage, cheese, and hot sauce. Makes 12 servings. (1 taco= serving)

    I really like this recipe! It was super easy which is great for my busy schedule. I couldn't find the veggie/bean mix at my local store so I substituted for one with out black beans and just made a can of black beans on the side over rice. Mmmm... I Will keep this in my dinner tool box!!! - 8/31/11
