Introduction

Not exactly a health food, but my friend Alyssa gave me this recipe for some deliciously cripsy-yet-soft cookies. Not exactly a health food, but my friend Alyssa gave me this recipe for some deliciously cripsy-yet-soft cookies.
Number of Servings: 50

Ingredients

    2 cups whole wheat flour
    1 cup granulated sugar
    1 cup light brown sugar
    2.5 cups instant oatmeal, blended
    12 ounces chocolate chips
    1/2 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon baking powder
    1 teaspoon vanilla
    2 eggs
    1 cup vegetable shortening

Directions

Preheat oven to 375 degrees F.

Cream the shortening in a mixing bowl. Add both sugars and mix until combined.

In a food processor, blend the oatmeal until it is a coarse powder.

Mix in eggs and vanilla. Add all remaining ingredients except for chocolate chips. Mix thoroughly, then fold in chips.

Note: The batter may seem dry, but it will stay together; don't worry.

Using heaping teaspoons, space the rounds of dough about 1 inch apart (they will not flatten out when they bake).

Bake for 10 minutes.

Yields approximately 50 cookies.

I am not sure about the vegetable shortening for healthy cookies. I'd play with this some and try canola oil or Smart Balance. - 9/22/09

As I said in the recipe description, this is not health food.
