Introduction

Tasty! I like the flavor of the red potatoes, especially when roasted. You can roast them until just soft, or longer to get more crispy ones, like I prefer! Tasty! I like the flavor of the red potatoes, especially when roasted. You can roast them until just soft, or longer to get more crispy ones, like I prefer!
Number of Servings: 6

Ingredients

    6 med red potatoes (quartered then chopped into big 2-bite size pieces)
    2 tbsp. prepared pesto
    1 tbsp Olive oil
    1 tbsp minced garlic
    1 tbsp dried basil
    dash kosher salt

Directions

Preheat oven to 450.
In a large bowl, combine all ingredients and toss well.
Spray a large baking sheet with Pam, and spread potatoes on pan and roast in oven for about 25-40 minutes, depending on your oven, and how crispy you like them.
About every 10-15 min. stir potatoes so they don't burn.
