Ingredients

    Whole Wheat Flour, 1.25 cup
    Fry's Cocoa, 4 tbsp
    Baking Powder, 1.25 tsp
    Baking Soda, .75 tsp
    Salt, .5 tsp
    Cinnamon, ground, 1 tsp
    Banana, fresh, 1 small (6" to 6-7/8" long)
    Applesauce, unsweetened, .5 cup
    Milk, nonfat, .25 cup
    Vanilla Extract, 1 tsp
    Zucchini, 1 cup, shredded
    Granulated Sugar, 0.5 cup

Directions

Preheat oven 350F. Whisk flour, cocoa, baking powder, soda, salt and cinnamon together. In another bowl, cream mashed banana with applesauce and sugar. The kids did this with a whisk. Add in milk, vanilla, zucchini, chocolate chips (toss them with a bit of flour and they won't sink to the bottom of the batter. Martha Stewart taught me that trick) and nuts if you are using them to wet mixture. Stir to combine.

Add flour mix to wet mix in 3-4 batches. Scoop by 1/4 cupfulls into greased muffin pan (or use liners like I did because I don't like to scrub muffin tins. Bake 15-20 minutes. Let cool and enjoy!!

    Really good and moist! Can't believe this is made with no oil and whole wheat flour. And with banana, zucchini, and apple sauce, it's practically a fruit serving all by itself. - 2/23/10

    Moist, a great texture, and a good size, though not very sweet. I grated the zucchini fine and squeezed out excess moisture. Next time I think I might divide this recipe into 12 muffins (each one would be .75 servings) and add 3/4 cup almonds (1 T per serving) for the same total calories - 2/23/10

    On taste alone this recipe rates 5 stars. These are incredibly moist and delicious. Problems: it mentions adding chocolate chips and nuts, which are not in the ingredient list. This changes the calorie and nutritional info. Baking time should be 20 min, not 10. I got 12 full-sized muffins, not 9. - 8/19/12
