Introduction

Here is my first recipe submission. This came out of a Healthy Cooking magazine. It was so easy to make and my husband and I loved it. In fact he said it tasted like "more," so I'm sure I'll be making it again.

Just one issue came up when submitting it. There was a conflict between the nutritional values given in the recipe (based on 4 servings) and those calculated through SP. So I adjusted the number of servings on SP to bring values more in sync.

Number of Servings: 6

Ingredients

    * Ground beef, lean, 16 oz
    * 1 small Green Peppers (bell peppers),
    * 1/4 cup Onions, raw, chopped
    * 8 oz Tomato Sauce
    * 1/2 cup Green Olives stuffed with pimiento
    * 1/4 cup rasins
    * 1 Tbsp Cider Vinegar
    * 2 cup Hot cooked White Rice, long grain

Directions

In a large nonstick skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, olives, raisins and vinegar. Cook for 5-6 minutes or until raisins are plumed. Serve with rice.
Serves 4

1 cup picadillo with 1/2 cup rice equal 354 calories. 12g fat, 56mg cholesterol, 697mg sodium, 36g carbohydrate, 2g fiber, 25g protein.
