Ingredients

    Shrimp, raw, 200 grams (about 25-30 medium shrimp)
    1 leek
    1 medium onion
    3 cloves garlic
    1 cup sweet, red, raw, sliced peppers
    20 beans green beans
    5 plum tomatos
    2 tbsp olive oil
    1 package Spinach Pasta
    3 tbsp Parmesan Cheese, grated
    1/2 teaspoon of the following seasoning: cumin, cayenne, salt, pepper, oregano, curry
    2 tbsp fresh cilantro

Directions

Boil the pasta. Finely chop onion, garlic and leek (use green part of leek as well as white) and set aside. Finely chop peppers and cut green beans into 1" sections. Remove seeds from tomatoes and chop. Heat oil in pan with dry seasonings. Saute onion, garlic and leek until onions are glassy. Add shrimp and cook for 1 minute. Add peppers, green beans and tomatoes. Mix for 2 minutes; lower heat and cover for 5 minutes. Add fresh cilantro. When the pasta is 'al dente' add to shrimp mixture. Cook for 1 more minute. Remove from heat and serve. Top with cheese.
