Introduction

Ingredients

    1 Large baked sweet potato, skin removed
    1 tsp Olive Oil (or your choice of medium temp oils)
    2 tsp Salt, kosher preferably
    2 tsp Fresh Cracked black pepper

    I occasionally add a dash of nutmeg or hot sauce for a change up.

Directions

Makes about 6 servings.

First slice your sweet potato into half inch think rounds. It's easiest if it's still cold from the fridge.

Lightly coat the top of the pieces with half the oil (I use my fingers).
Sprinkle with salt and pepper liberally, or to your taste.

Heat a non stick pan over medium heat. I add the slices before it gets hot but after it's warm, salt side down.
Now oil and season the other side.

Cook until there is just a slight golden brown crust on the bottom. Flip gently. Cook on the other side until it matches.

Let them cool for a minute before eating for best texture. Yummy!
