Introduction

Ingredients

    4 boneless chicken breasts, no skin
    4 tsp sunflower oil
    2 tsp lemon juice
    1 tbs Cajun spices

    Salsa:
    6oz fresh pineapple, chopped
    1oz onion, chopped
    1oz red pepper, chopped
    1/4 in piece of root ginger, chopped
    1tbs cider or wine vinegar
    1tbs soft brown sugar
    4tbs barbecue sauce

Directions

Mix all the salsa ingredients together and warm in a saucepan.

Pre-heat the grill or BBQ to medium-hot setting. Rub 2 teaspoons of oil into the chicken and add the spices. Rub in well. Mix remaining oil with lemon juice and keep for basting.

Grill chicken for 4-5 minutes, brushing with oil/lemon mixture. Turn over and repeat.

Turn over once more and brush with remaining baste. Turn heat up and grill for a few minutes until crisp and dark in colour. Serve with a little of the warm salsa, baked potato and salad.
