Introduction
This will be the juciest, moist, chicken you have ever had. I first ate this when I moved to the south and a friend of my husband's made it. I changed it to make it less fattening. I don't really know if this is considered a nutritional meal but it is very good and if you eat the white meat it will be slightly healthier. You can substitute the beer for a can of diet pepsi. Ingredients

1 whole roasting chicken
black pepper
Mrs. Dash extra spicy
paprika
Juice of 1 lemon
Brown rice
frozen peas
Directions
Clean chicken, remove skin if desired. (I bake it with skin on but then remove once cooked).
Mix black pepper, mrs. dash, paprika, and juice from 1 lemon in a mixing bowl.Rub seasoning over entire inside and outside of chicken. Open 1 can of lite beer. (I use miller lite with 64 calories). Place beer in chicken cavity with chicken standing upright in pan. Bake at 375 in conventional oven for 1 hr.15 min. or at 375 in regular over for 1hr. 45 min. Serves approximately 6. I serve this with brown rice and a veggie.
