    1 1/3 cup lentils
    2/3 cup raw brown rice
    4 Tbsp olive oil
    4 cloves garlic, minced
    4 Tbsp soy sauce
    4 bay leaves
    1 large onion, finely chopped
    4 medium carrots, chopped
    2 medium potatoes, diced
    1 large celery stalk, chopped
    1/2 cup frozen corn
    1/2 cup red cooking wine
    2 tsp each dried basil and paprika
    1 tsp each dried oregano and dried thyme
    1 tsp salt
    1/2 tsp black pepper


Place the first 6 ingredients in a large soup pot and cover with about 10 cups of water. Bring to a boil and simmer, covered, over moderate heat for about 10 minutes.

Add all the remaining ingredients. Add more water until your soup pot is full, up to 2 more cups. Simmer for at least 45 minutes, but it is better if you simmer for several hours.

Makes 8 big servings.
