It's not raw anymore due to the action of the lime, that really cooks the fish, you can see it.
    Delicious!

The acid in the limes "cooks" the fish. It's not really raw. - 1/13/08

Yummy! Had this first in Panama with corbina. Didn't know it could be made w/flounder. Excellent! Lime juice cures the fish to it's not "raw"..but it IS great! - 1/27/08

The fish isn't raw - lime cooks it. My MIL (husband is Peruvian) taught me to make this, and as a white girl, I LOVE it. They tell me that true Peruvian ceviche never uses tomatoes, though, and I wouldn't eat it w/ tomatoes. Other than that, YUM! - 1/16/08

I am peruvian and love this dish, the bad thing is the chilie: which is not jalapeƱo, that one is mexican, the taste is different from the original "yellow pepper" paste (in latin stores). You don't use tomatoes and also you serve it with baked sweet potatoes and a bed of boston or bibb lettuce - 1/14/08

I ate this in Mexico a number of times...some cooks added a shot of Tequila to the dish, and I usually do also. Either way, it's good. - 1/13/08
