Introduction

Awesome salad that can be eaten as a side, or on a bed of greens for a heartier lunch. Awesome salad that can be eaten as a side, or on a bed of greens for a heartier lunch.

Ingredients

    2 cups corn, cooked
    2 5oz cans tuna in water, drained
    1 cup mixed bell peppers, chopped
    1/2 cup onion, chopped
    Juice of 1 lime
    1.5 tbsp olive oil
    salt and pepper to taste

Directions

Makes 10 1/2-cup or 5 1-cup servings

Cook corn until done, drain, and measure into medium mixing bowl.

Add sliced bell peppers, onion, and drained tuna.

Add juice of 1 lime and 1.5 tbsp olive oil (or to your liking).

Mix together, add salt and pepper to taste.

Eat immediately or store in refrigeration for later consumption.
