Ingredients

    2 tsp unsalted butter
    85 g sundried tomatoes in oil, chopped
    85 g shredded carrots
    85 g chopped red onion
    1 clove garlic
    1 medium hot pepper, seeds removed
    100 g fresh baby spinach, washed

Directions

Saute tomatoes, carrots, onion, garlic and pepper in butter until onions are softened. Stir in spinach, cover and let simmer for 5 minutes.
