Ingredients

1.5 teaspoon sea salt
1 teaspoon ground turmeric
6 cloves garlic, finely chopped
1 lb boneless, skinless salmon fillet (~4 100g fillets)
2 tbsp sunflower oil
0.5 cup coconut milk
0.5 tsp black peppercorns, coarsely crushed
2 fresh chiles, cut in half lengthwise
Directions
6 servings (3/4 fillet per serving)
Mix the salt, turmeric and garlic together. Sprinkle over salmon fillet, rub in. Refrigerate the fish, covered, for at least 30 min or as long as overnight.
Heat the oil in a large skillet over medium heat. Add salmon, spice-covered side down, sear for about 2 min. Turn over and sear the underside until browned, about 2 min.
Measure out the coconut milk and add the peppercorns and chiles. Stir, and pour over the fish. Lift the fillet with a spatula and tilt the fish slightly to allow the spiced coconut milk to run under it. Reduce the heat to medium-low, cover the skillet and braise the salmon, spooning the sauce over it occasionally, until the flesh is starting to flake, 3-5 min.
