Ingredients

1 lb lean ground turkey (97/3)
1 large yellow or white onion, coarsely chopped
1 T olive oil
1 can low sodium chicken broth
1 small can green chiles, chopped
1 can white kidney beans (cannelini), drained
2 t oregano
1 t cumin
1 t garlic powder
1 t salt, plus salt to taste
Directions
1. Chop white or yellow onion. Saute in 1 T olive oil in Dutch oven for 2-3 minutes.
2. Add lean ground turkey and brown until turkey is cooked through and onions are translucent.
3. Add oregano, cumin, garlic powder and salt.
4. Add green chiles, chicken broth and white kidney beans.
5. Add water and simmer 30 minutes.
6. Adjust seasonings as needed.
Serve with rice. Sprinkle with hot sauce, salsa, green onions, or cheese as desired. Makes 6 servings.
