Ingredients

    * Chicken Breast, no skin, 90 grams
    * Orange Juice, .2 cup
    * *Lemon Juice, .2 cup
    * Red Ripe Tomatoes, .5 tomato
    * Tarragon, ground, 1 tbsp
    * Olive Oil, 1 1tsp
    * Salt, 1 dash
    * Pepper, red or cayenne, .3 tsp
    * Mustard (Dijon, preferebly), .5 tsp

Directions

Preheat the oven to 250 degrees celsium. Cut chicken breast in 4 pieces, put it in a bowl, add orange juice and a bit of lemon juice and let it marinade. Cut half of tomato in circles, salt them on both sides and let them rest on a paper towel. Take a piece of cooking foil, put on one piece of chicken breast, one piece of tomato, sprinkle with tarragon, then again one piece of chicken breast, one piece of tomato, sprinkle with tarragon, continue until you run out of ingridients. Put on salt, cayenne pepper, pour over a teaspoon of olive oil and the remaining lemon juice. Make a package out of foil and put it in the oven, bake for 15 minutes. Pour out the juice, stirr in the mustard, serve as a sauce over the chicken breasts and tomatoes.
