Ingredients

    1/3 Cup - Frozen, Chopped Spinach, thawed
    1.5 oz. - Neufachatel Cheese
    1 oz. - Sun-Dried Tomato Pesto
    .5 oz. - Feta Cheese, crumbled
    2- 6 oz. Boneless, skinless Chicken Breasts
    1 Tbsp. Olive Oil

    Cooking Spray


Directions

Preheat the oven to 350 degrees F (175 degrees C).

Squeeze all water from defrosted, spinach. Combine with the Neufachatel cheese, pesto and feta.

Cut a pocket in each chicken breast and stuff with the spinach mixture.

Heat olive oil in non-stick skillet over med-high heat. Add chicken and brown for 4 minutes on each side (set timer and do not touch until 4 minutes is up and time to turn).

Place chicken on an oven-safe dish and place in oven for approx. 15 minutes to finish cooking through.
