Ingredients

1 6-1/2" Pita Bread (whole)
1 tbsp BBQ Sauce (your favorite)
3 oz Boneless & Skinless Chicken Breast (tenders work great)
1 oz Monterey Jack Cheese (or your favorite)
Directions
Preheat your oven to 350 degrees.
Cook 3 oz. boneless chicken breast with a little bit of salt and pepper to taste. (Jamaican Jerk seasoning is nice too in this recipe.) I use a George Foreman Grill, but you could cook in a frying pan with some no fat cooking spray.
While chicken is cooking, tend to it so it doesn't burn, lay the pita bread out on your work surface and spread 1 tbsp of barbecue sauce on the top. Measure your 1 oz Monterey Jack Cheese, and spread it over the BBQ sauce.
When your chicken is done, let it rest for just a minute or two. Cut into small pieces, and put on top of your pizza. Put your pizza in the oven for 10 minutes, and you've got a nice hearty meaty pizza that will fool your taste buds into thinking you're sitting at a pizza parlor.
Try some of these variations:
If you need fewer calories, cut back on the meat, or split your pita into two circles.
Use 2 tbsp of marinara, 1 oz mozzarella cheese, 1 oz pepperoni to make a nice low-cal pepperoni pizza.
Use 2 tbsp salsa, 1 oz Mexican cheese blend, and 3 oz chicken sautéed in spicy seasonings.
