Ingredients

    2 T. vinegar
    2 t. olive oil
    1 clove garlic
    5 t. tabasco sauce
    1 15 oz. can black-eyed peas
    1 11oz. white shoe-peg corn
    1 14.5 oz. can petite diced tomatoes
    1 small onion chopped
    1bell pepper,chopped
    salt and pepper to taste


Directions



In large bowl, whisk together vinegar, oil, garlic, and hot sauce. Drain and rinse peas and corn. Add to vinegar mixture along with onion and pepper. Salt and pepper to taste.Toss gently to coat.Chill for two hours. Serve with tortilla chips.
Makes 12 half cup servings.

    Very Good
    I've made this one twice for barbeques and it has been a hit. I did substitute the canned tomatoes with fresh tomatoes both times. I plan to make it again next weekend. - 5/21/10
