Number of Servings: 3

Ingredients

    1C Lentils - dry
    3C Water
    1t. Tumeric
    1C onion - chopped
    1 to 2T butter or margarine (nutritional analysis accounts for 2T butter)
    Chili pepper - chopped (fresh/dry, mild/hot - to taste!)

Directions

Combine lentils, water and tumeric and boil, uncovered, in a medium saucepan until all the water is absorbed and lentils are tender (40-60 minutes). May add more water as needed if the lentils are still chewey - be careful not to scorch them!

In a separate frying pan, melt better. Add chopped onion and chili, and cook over medium heat until onions are golden brown and sweet (5-8 minutes).

Combine onion mixture and cooked lentils and serve warm. May be eaten alone, or with whole-wheat flatbreads, tortillas, brown rice or barley.

Serves 3 as a high-protein, high-fibre main dish.
