Ingredients

1 TBSP olive oil
1 pound very lean ground beef
1 cup chopped onions
3 cloves minced garlic
1 cup julianned carrots
2 tsp salt
1 tsp basil
1 tsp oregano
1/2 tsp cayenne pepper
1/2 tsp thyme
28 oz tomato sauce (low sodium)
32 oz chicken stock
15 oz kidney beans (rinsed and drained)
15 oz white beans (rinsed and drained)
1 cup ditalini pasta
Directions
Heat 1 Tbsp oil in skillet and add ground beef, cook completely and add onion, garlic and carrots. Cook stirring occasionally for 10 mins. Pour into crock pot. Add salt, oregano, basil, thyme and cayenne pepper.
Blend tomatoes in blender until all chunks are gone. Add tomatoes, beans and beef stock to crock pot. Cook on low for 7 hours.
Pour uncooked pasta into soup and stir. Cook for 30 mins. more. Don't be fooled...even though this looks like it's not enough pasta...trust me! It grows! If you add too much, it sucks up all your sauce and gets really soggy!
