Ingredients

    2 eggs
    2 egg whites
    1/4c chopped onion
    10oz frozen spinach, thawed and squeezed
    2tbsp bacos imitation bacon bits
    3 laughing cow wedges- light swiss
    1/4c light sour cream
    1/2c skim milk
    6oz evaporated fat-free milk (1/2 12oz can)
    1tbsp whole wheat flour
    salt and pepper to taste
    1/8tsp nutmeg
    non-stick spray

Directions

Pre-heat oven to 350.

In a pan, cook onions in non-stick spray until lightly browned. Add spinach and cook until slightly dry.

In a bowl, add eggs, sour cream, cheese, milks and spices. Beat with a wire wisk until blended well. Add flour and stir. Then add the bacos and spinach mix and stir to combine. Pour into a 9in pie plate that has been sprayed with nonstick spray. Bake for about 40mins
