DRY INGREDIENTS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
WET INGREDIENTS
1 c. oil
4 eggs
2/3 c. water
2 c. pumpkin
Directions
Mix dry ingredients and add wet ingredients, alternately.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.

Yesterday I made 36 servings plus a small loaf with this recipe. I used a 1/4 measuring cup to scoop the batter into the individual muffin cups until they were about 3/4 full. The final size of the muffins are the standard one-serving size. Not too big but satisfying. I also added 2 cups of raisins.
