Forget grabbing deli sandwiches on the way home from work. You can feed a family of four gourmet, healthy roast beef sandwiches, complete with sweet caramelized onions and creamy bleu cheese dressing, for about $8. That's $2 a sandwich--just try to spend that little at a deli!

Serve with a piece of fruit and a cup of skim milk, and you've got a healthy dinner in no time flat.

You'll still have four servings of roast left. Use them to make Chef Meg's Vegetable Beef Soup. These sandwiches can be eaten hot or cold. Try toasting the sandwich thins for added texture.

Directions

Prepare the blue cheese sauce by gently combining the blue cheese and Greek yogurt. Layer between the bread the lettuce, beef, onions, and dressing.

    LOVED this recipe. Do not be afraid of the blue cheese sauce - it is the perfect addition to this sandwich. My husband ate his without the blue cheese but agreed after trying mine that it is better with the sauce. Why eat out when you can have this?! Wonderful! - 1/8/10

    As pictured, these rolls, are not the Arnolds sandwich thins you include in the recipe. This problem I understand from business wanting to sell their product, why mislead us here? Sub out the thins for reg. burger rolls abnd the #'s will go through the roof, especially the sodium... : ( - 3/28/12

    I just made this tonight!!!! ONE OF THE BEST RECIPES!!! It was soo goood! Instead of the Beef Roast I bought some sliced roast beef from the deli - measured out 3oz - still plenty of meat and less cals I think - Definitely a must have AGAIN!!! YUmmmy!!! - 1/14/10

    Substitute Pepperidge Farm "Very Thin Whole Wheat Bread" for the sandwich thins and save another 26 calories. (2 slices are only 74 calories) - 6/27/11

    This recipe is right up my alley . . . but I am saddened by the photo. It shows a regular, thoough maybe lower calorie, bun, not a sandwich thin. - 3/13/12
