Introduction

Number of Servings: 2

Ingredients

    Chicken Breasts (2) skin removed or skinless boneless
    3 Baby Red Potatoes or 1.5 large Red Potatoes cubed
    1 TBSP EVOO
    1 tsp Thyme
    1 tsp McCormick Low Sodium Montreal Chicken Seasoning
    Salt/Garlic for taste

Directions

Makes 2 servings...
Tenderize the chicken either with mallet or with fork..
Use .5 tablespoon of EVOO to coat chicken breasts
Sprinkle .5 tsp of thyme on both sides of chicken
Sprinke 1 tsp of McCormick Seasoning on both sides of chicken
Place in broiler , turning chicken 3-5 mins. Should cook for about 15 mins. juices should be clear.

Roasted Red Potatoes:
Take remaining EVOO, coat cubed or quartered (which ever you prefer) red potatoes
Sprinkle remaining thyme on potatoes
Add Salt/Garlic or other seasoning you prefer for taste
Place potatoes skin side down on cookie sheet

After chicken is cooked, turn oven to 375. once at set temperature place potatoes in oven for about 15-30 mins. When they are golden they are done.

Easy recipe, cook's fast and tastes good. You may add a side of any vegetable steamed or microwaved. I like to use broccoli/cauliflower/carrot mix steamed.
