Introduction

Boston Market ( casual dining) makes a really good meatloaf but this one is alot healthier and making it in the crockpot makes getting dinner on the table a snap. Make it up the night before and just pop it in the crockpot and set to low and dinner is ready when you get home. Match up with some healthy sides of steamed vegs. Dinner in a snap. Ingredients

    16oz 93% lean Ground Beef
    1 cup Pace Chunky mild salsa
    3/4 cup Bread Crumbs Italian seasoned
    1/2 cup CacheValley Reduced Fat Cheddar & Monterey Jack Cheese
    2 egg whites
    3 garlic cloves minced
    2 tablespoons dried parsley
    Topping:
    1 Tablespoon Brown Sugar
    1 Tablespoon Ketsup
    2 Teaspoons Prepared Mustard

Directions

Stir all ingredients (except toppings) together until just mixed. Spray crockpot with Pam. Place stale bread into crockpot to soak up grease, discard before serving. Make a loaf and place onto bread in crockpot. Mix toppings together and brush top of meatloaf. Cook on low for 6 to 8 hours (or until meatloaf reaches 160 degrees in middle). Let rest for 10 minutes to remove from crockpot.
Makes 6 servings
Optional cook at 350 degrees for 75 minutes or until internal temperture is 160 degrees

    The three items below Toppings: is for the top. Brown Sugar, Ketsup and mustard. Hope that helps.Sorry for the confusion. C

    Very Good
    I enjoyed this quick, easy meatloaf! I cut out the breadcrumbs and used grated parmesian cheese instead, then I used ketchup/mustard without the brown sugar for the topping. YUM! Make sure to use a pan that allows the grease to drip off... - 11/14/09
