Simple Salad for one Simple Salad for one
Number of Servings: 1


    One ounce fresh mozzarella cheese
    1 1/2 tablespoon freshly chopped basil
    1 Plum (or Roma) tomato sliced
    1 tsp olive oil
    1/2 tablespoon balsamic vinegar


Slice tomato. Slice fresh mozzarella cheese and place on top of tomato slices. Chop basil and sprinkle on top of cheese. Mix olive oil and balsamic vinegar, and pour over tomato slices. Chill until ready to eat.

    So refreshing and simple. My husband and I both loved this. We have made it many times since I found this recipe. I like the balsamic flavor to good seasoning flavor. But, we eat both. - 1/12/10

  • Incredible!
    Quick, simple, and delicious! I'm sure I will make this often. Easy to make just one portion, or multiply the quantities for company.
    This does work with dried basil, but is best with fresh.

  • This looks yummy and very easy. Have tons of home grown tomatoes that need to be used. Great menu for when were out on the boat - 8/5/11
